Ingredients:
- 1 cup quinoa, cooked
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 cup corn kernels
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions:
Toast the black beans, add the corn kernels, cherry tomatoes, red onion, and cilantro to a large bowl
Then add the cooked quinoa
Mix cumin, salt, pepper, lime juice, and olive oil in a small bowl with a whisk
Mix the quinoa and vegetables together, then add the dressing and toss everything together
