This vegan take on tortelloni is rich, creamy, and great for a cozy dinner. There is a lot of flavor in this dish thanks to the charred scallions and the sweet corn crema. This dish is sure to please both vegans and non-vegans
Ingredients:
- 1 package vegan tortelloni
- 2 cups fresh or frozen corn kernels
- 1/2 cup coconut cream
- 2 cloves garlic, minced
- 2 tablespoons nutritional yeast
- Salt and pepper to taste
- 4-5 scallions, trimmed
- 2 tablespoons olive oil
Instructions:
Follow the directions on the package to cook the vegan tortelloni
Remove the water and set it aside
Put the corn kernels, coconut cream, minced garlic, and nutritional yeast in a blender
Mix until its smooth
Add pepper and salt to taste
Put the pan or grill over medium-high heat
Put the scallions on the hot pan and brush them with olive oil
It should take about two to three minutes per side to get charred on all sides
Take it off the heat and cut it up into little pieces
Cut the cooked tortelloni into pieces and put them on plates to serve
Pour the corn crema over the top and top with the charred scallions
