Ingredients:
- 1 cup Greek yogurt
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tbsp honey
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup milk
- Butter or oil for cooking
Instructions:
In a mixing bowl, combine Greek yogurt, honey, egg, and vanilla extract
Mix well
In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, and salt
Gradually add the dry ingredients mixture to the wet ingredients mixture and stir until just combined
If the batter is too thick, add milk to reach your desired consistency
Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil to coat the surface
Pour 1/4 cup of the pancake batter onto the skillet for each pancake
Cook until bubbles form on the surface and the edges start to set, about 2-3 minutes
Flip the pancakes and cook for an additional 2-3 minutes on the other side, or until they are golden brown and cooked through
Repeat the process with the remaining batter, adding more butter or oil to the skillet as needed
Serve the Greek yogurt pancakes hot with your favorite toppings, such as fresh berries, maple syrup, or additional honey
