Keto Mexican Cauliflower Rice Bowls

If you want a tasty and filling low-carb alternative to regular rice bowls, try these Keto Mexican Cauliflower Rice Bowls. These are great for a quick and easy keto-friendly meal because they taste like Mexican food.

Ingredients:

  • 1 head cauliflower, grated
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeo pepper, diced optional
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup cooked chicken, shredded
  • 1/2 cup salsa
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions:

In a large skillet, heat olive oil over medium heat

Add onion, garlic, bell pepper, and jalapeo if using

Cook until softened, about 5 minutes

Add grated cauliflower to the skillet

Stir in cumin, chili powder, salt, and pepper

Cook for another 5-7 minutes until cauliflower is tender

Stir in cooked chicken and salsa

Cook until heated through

Divide the cauliflower rice mixture into bowls

Top with sliced avocado, chopped cilantro, and serve with lime wedges
