Gluten-Free Peanut Butter Smores Cookies

These gluten-free peanut butter Smores cookies are a delicious twist on the classic campfire treat. They are easy to make and perfect for those who need to avoid gluten. The combination of peanut butter, graham crackers, marshmallows, and chocolate chips creates a delightful cookie that will satisfy your sweet cravings.

Ingredients:

  • 1 cup gluten-free peanut butter
  • 1 cup gluten-free graham cracker crumbs
  • 1/2 cup gluten-free powdered sugar
  • 1/2 cup mini marshmallows
  • 1/4 cup chocolate chips
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 teaspoon baking soda

Instructions:

Preheat your oven to 350F 175C and line a baking sheet with parchment paper

In a large mixing bowl, combine the gluten-free peanut butter, gluten-free graham cracker crumbs, gluten-free powdered sugar, egg, vanilla extract, and salt

Mix until well combined

Gently fold in the mini marshmallows and chocolate chips into the cookie dough mixture

Using a spoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, leaving enough space between each cookie

Press each cookie down slightly with a fork to create a crisscross pattern and flatten them a bit

Bake in the preheated oven for about 10-12 minutes or until the edges turn golden brown

The cookies will be soft when you remove them from the oven but will firm up as they cool

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
