This Vegan Quinoa Salad with Orange Dressing is a refreshing and nutritious dish perfect for any occasion. Packed with protein-rich quinoa, fresh vegetables, herbs, and a zesty orange dressing, its both satisfying and flavorful.
Ingredients:
- 1 cup quinoa, rinsed and drained
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup sliced almonds, toasted
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons orange juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon maple syrup
Instructions:
Put the quinoa and water in a medium-sized saucepan
Bring to a boil, then turn down the heat
Put the lid on and let it simmer for 15 to 20 minutes, or until the quinoa is done and the water is gone
Use a fork to fluff up the quinoa, then put it in a big bowl for mixing
Allow it to cool a bit
Toss the quinoa with the red onion, parsley, mint, cherry tomatoes, and toasted almonds
Sprinkle to mix
Mix the dressing by whisking together the maple syrup, orange juice, apple cider vinegar, olive oil, and apple cider vinegar in a small bowl
Add the dressing to the quinoa salad and mix it all together until its well covered
Add pepper and salt to taste
Serve right away or put in the fridge to cool down before serving
