Ingredients:
- 1 1/2 cups crushed chocolate cookies
- 1/4 cup melted butter
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 2 cups cream cheese
- 1 cup granulated sugar
- 3 eggs
- 1 tsp vanilla extract
Instructions:
Preheat oven to 325F 160C
In a bowl, combine crushed chocolate cookies and melted butter
Press this mixture into a pie dish to form the crust
In a microwave-safe bowl, melt the chocolate chips and heavy cream in 30-second intervals until smooth
Stir in powdered sugar
In a separate bowl, beat cream cheese and granulated sugar until creamy
Add eggs one at a time, mixing well after each addition
Stir in vanilla extract
Pour the chocolate mixture over the cookie crust, spreading it evenly
Carefully pour the cream cheese mixture over the chocolate layer
Bake in the preheated oven for 45-50 minutes, or until the edges are set but the center is slightly jiggly
Allow the pie to cool at room temperature, then refrigerate for at least 3 hours or until set
Serve chilled and garnish with whipped cream and chocolate shavings if desired
