These Paleo AIP Christmas Morning Breakfast Rounds are a festive and delicious way to start your holiday morning. Made with grated sweet potatoes and warm spices, theyre grain-free, gluten-free, and autoimmune protocol-friendly.

Ingredients:

  • 6 large sweet potatoes, peeled and grated
  • 1/4 cup coconut flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp cloves
  • 1/4 tsp sea salt
  • Optional: sliced fruit or berries for topping

Instructions:

Preheat your oven to 375F 190C and grease a muffin tin with coconut oil

In a large bowl, combine the grated sweet potatoes, coconut flour, melted coconut oil, maple syrup, cinnamon, ginger, cloves, and sea salt

Mix well to combine

Spoon the mixture evenly into the prepared muffin tin, pressing down gently to pack it in

Bake in the preheated oven for 30-35 minutes, or until the edges are golden brown and crispy

Allow the breakfast rounds to cool slightly before removing them from the muffin tin

Serve warm, topped with sliced fruit or berries if desired
