Ingredients:
- 1 cup quinoa, rinsed
- 2 cups coconut milk
- 1/2 cup sliced almonds
- 1/4 cup shredded coconut
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions:
In a saucepan, combine quinoa and coconut milk
Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is cooked and liquid is absorbed
In a dry skillet over medium heat, toast sliced almonds until golden brown, stirring frequently to prevent burning
Fluff the cooked quinoa with a fork and stir in toasted almonds, shredded coconut, maple syrup, vanilla extract, and a pinch of salt
